Michelin France 2005 Introduces <<Rising Stars>>

Dear Reader,

We are delighted to introduce the 96th edition of The Michelin Guide France.  The selection of the best hotels and
restaurants in every price category is chosen by a team of full time inspectors with a professional background in the
industry.  They cover every corner of the country, visiting new establishments and testing the quality and consistency of the
hotels and restaurants already listed in the guide.  Every year we pick out the best restaurants and award one to three stars.  
Stars are awarded for cuisine of the highest standards and reflect the quality of the ingredients, the skill in their preparation,
the combination of flavours, the levels of creativity and value for money, and the ability to combine all these qualities not
just once, but time and time again.  This year sees two important additions.  One highlights those restaurants which , over
the last year , have raised the quality of their cooking to a new level. Whether they have gained a first star or risen from one
to two stars, or moved from two to three, the newly promoted restaurants are marked with an N next to their entry to signal
their new status in 2005.  We have also picked out a selection of <<Rising Stars>> (<<espoirs>>).  These establishments,
listed in red, are the best in their present category .  They have the potential to rise further, and already have an
element of superior quality: as soon as they produce this quality consistently, and in all aspects of their cuisine, they
will be hot tips for a higher award.  We've highlighted these promising restaurants so you can try them for yourselves: we
think they offer a foretaste of the gastronomy of the future.  We're interested to hear what you think of our selections,
